The free-span interior is actually an advantage here: without load-bearing walls, the layout logic flows entirely from the programme, so I'd start by anchoring the three fixed zones — cooler bank at the back, restrooms and mechanical along the right, register counter and kitchen on the left — then build the retail floor plan outward from those constraints. ADA clearances for six restrooms in a row require careful corridor math, and I'd flag those dimensions explicitly so the plan is permit-ready from the start. For deliverables, I'd produce a fully dimensioned PDF alongside the native source file (DWG or Revit, whichever works best for your next-phase consultants), with a keyed FF&E legend, elevation call-out markers tied to the open-rafter ceiling heights, and clear annotation at the material transitions — particularly where the brick wainscot meets the metal siding at the front and side returns.
