Arduino - Time Start / Stop with 3 sec delay.

Hi!
I am looking for Arduino specialist that can find solution for a small problem we have run into.
Here is a scenario to keep in mind, We have a Gate with sensor -> Person will pass through the gate, Time Starts -> Person will run for 10-20 seconds completing a challenge and return back through the gate with sensor -> Time stop.
But what we get instead right now, is Start / Stop so fast that he doesn´t have time to move his second leg through :)

On the video you can see that we have Arduino + Sensor + Screen that displays Time.
On the video i show an example if someone would walk trough the gate with the sensor, time would Start on the first leg (finger on my example) and then it Stops when the second leg (finger on my example) past through . What we need is to keep time running after it starts and not stop the time next 3 seconds , thats approximately time needed for the second leg to past through.
