Hello, I hope you're having a great day. I've configured GPON ONUs and routed between LAN ports, having delivered several similar builds. Recently I set an HG8245Q to use LAN1 as WAN, moving PPPoE and VLAN 100 into port mapping via web GUI and telnet, and routed VoIP SIP traffic through LAN2. I'd start by backing up config, enabling LAN1 WAN mode on the HG8120C, setting VLAN tags and static routes, then test SIP registration and NAT.
