Para empezar me gustaría ver una muestra de como pueden ser los formularios impresos y así hacerme una idea de lo que se necesita extraer. Como mencionas la escritura presenta letra manuscrita, debemos plantear bien el flujo del sistema porque con letras manuscritas la extracción es mas compleja, a lo mejor se debería incluso agregar un paso de comprobación, pero para eso pásame una imagen de muestra y yo pruebo mediante diferentes técnicas como de bien se puede extraer la información. En cuanto a las tecnologías, lo realizaría en Python principalmente + algunas tecnologías secundarias si hacen falta.
