Set up Plex and Emby setups on Windows a few times - both work well, though Plex is my go-to for ease of remote streaming. For your setup I'd install and configure the media server, optimize transcoding settings for your hardware, set up secure remote access (with proper auth), and make sure the library scanning is working cleanly.
