I can get this done in 1 hour. I've already accomplished this for a few startup companies, other hirers on this platform and a games studio. The way I accomplish it so easily is using Docker, which will pull all the necessary stuff and run both Nginx + RocketChat in containers. There is a single file that you can edit to change things like the admin email, the domain to use and SSL certificates are automatically handled. I'll make sure to document it so that you understand it properly, this way it all be easily ported to another server or maintained by another freelancer without any reliance on me, something I believe strongly in.
