Looking for an expert to review our current Virtual Pageviews Set up in GTM and Analytics as we are not seeing stats pulling through. For the sake of an example Lets say we sell Apples and Oranges. The ThankYou page is dynamic, so depending on the purchase we have been able to push ProductCategory=Apples in the ThankYou Page URL so we can differentiate between sales for apples and oranges. We need someone to review this set up and fix it.

Shouldn't be too hard to fix. If you're passing additional data into the URL, it can be picked up in GTM easily. There are several potential solutions. I've debugged similar things before. Relevant Skills and Experience 5+ years of Google Analytics, Google Tag Manager, AdWords, FB Ads, and general digital marketing experience with over 100 clients.
